Fresh apple pie with grated apples and candied nuts

Apple pie is a real autumn things, but in this raw version with grated apples, making them also ideal in summer. Actually, it's a really great grandmother recipe, so maybe it can stir the memories of a few family members. It certainly over time created some for me 🙂

Some will claim, that this is a healthy cake. It's probably liiige to tighten it a bit! But one might say, that it is healthier than a number of other cakes such as chocolate cake 😉 In my version I add nuts, and it also helps a little on that 😉

You can choose to portion the apple cake or just serve it in a large bowl.

I use icing sugar instead of alm. sugar, since I think it's much easier to deal with, when grilling sugar – the groats do not turn into small hard lumps, as they like to do, when using alm. sugar.

Apple pie

Ingredients for apple pie:

Ca. 5 sweet apples
0,5 l. whipping cream
4 dl. finely rolled oatmeal
1 handful of almonds
1 handful of hazelnuts
2 dl. powdered sugar
2 teaspoon cinnamon
2 tsk vaniliepulver
3 tablespoons. freshly squeezed lemon

  • Chop almonds and hazelnuts.
  • Pour the nuts on the pan, and let them shake a little, before adding oatmeal.
  • Add icing sugar little by little – eg of three rounds, while turning the glory with a spatula or saucepan – be careful it does not burn. Let the icing sugar melt completely and stir, so that all the groats are toasted, before adding a new serving. Finally add cinnamon and vanilla sugar.
  • Stir well again, and shake well until light brown. Let it cool, so that the sugar can solidify.

  • Meanwhile, grate the apples on a coarse grater or better yet: a mandolin iron – but watch out for the cuts! The mandolin iron does, that the apples get an extra delicious and slightly firm consistency in the cake. Add lemon juice and stir a little, then the apples do not turn brown.
  • Whip the cream to whipped cream.
  • Layer oatmeal / nuts and apples in a bowl and spread whipped cream evenly over.
  • Decorate if necessary. with chopped nuts on top.
  • It can be served immediately, but let it just stand 20-25 minutes before serving, the cake is just allowed to set, and that only makes it better 🙂
